Rice with artichoke and truffle cream

A particular first course with an intense flavor, which will truly conquer everyone. Made with our artichoke and truffle cream

  • 300gr red rice
  • 40g butter
  • 3 artichokes
  • 100gr gorgonzola
  • 60gr cream of artichokes and white truffle
  • Q.b broth
  • 1 golden onion
  • 1 glass of white wine
  • Q.b salt
  • 1 clove garlic
  • Q.b extra virgin olive oil

First clean the artichokes, cut them into wedges, cover them with water and let them cook for 10 minutes.

In a pan, sauté the garlic with extra virgin olive oil. Add the artichokes and cook them for another 5 minutes.

Turn off the heat and add the gorgonzola, cover with a lid so that the gorgonzola melts. In a larger pan, add the sliced ​​onion, extra virgin olive oil and rice, let it toast a little and add the glass of white wine

At this point we add the sauce with the artichokes, the cream of artichokes and white truffle and the piece of butter. Let's mix well. We serve and place the burratina on top of the rice and if you prefer another bit of artichoke and white truffle cream.
