Ricotta gnocchi with truffle pesto is a classic dish that recalls tradition, easy to prepare and tasty to eat.

let's start by sifting the ricotta, add it to the egg and Parmesan, then add the salt and flour a little at a time.
We transfer the mixture on the pastry board and work it for a few minutes to make it smooth and homogeneous
We divide the dough into 4 parts and work them one at a time trying to obtain a cord.
We cut the gnocchi, pass them on a fork and then put them to rest on a baking sheet covered with a cloth (we can also leave them simple).
In the meantime, cut the lard into slices, then stick it and toss it in a pan with a drizzle of oil until golden and crunchy. We cook the gnocchi in salted water, then season them with pesto and serve them with the addition of lard
A classic but unique dish, with particular and decisive flavors.
